All the milk in my products, including my Ice Cream base comes from a dairy farm that raises only cows producing A2 milk, as opposed to the A1 milk predominately found in supermarkets and dairy products today. Research on elite athletes shows that A2 milk, which contains only the A2 beta-casein protein, is easier to digest than typical milk.
Before they were domesticated 10,000 years ago, all cows produced A2 milk. Human milk is also A2, so it is naturally recognized by the body and easy to digest. A1 milk, on the other hand, can cause stomach upset and contribute to the development of cardiac ailments and neurological disease.
Cows from my creamery are also grass-grazed and eat only non-GMO feed. Every load of milk is tested to be sure no artificial growth hormones or antibiotics are used—ever!
